I love, love, love this pudding! I can eat it for breakfast, lunch, diner or as a pudding particularly when I want something comforting, light yet filling. I grew up eating rice water almost every morning for breakfast. Other forms of packaged cereals were a luxury then. I was pleasantly surprised when I first visited London and found out that rice water was actually canned and sold as a pudding! My reaction was like whoa! You must be joking! No one in Ghana actually takes this pudding seriously! I later found out that the rice pudding sold in London was slightly different with a few additions. Ghana's rice water is literally as the name goes, rice and water. However, it's as good. Enjoy this version.
- 1 Cup Rice (use starchy rice)
- 5 Cups of Water
- Salt to taste
- Pinch of Nutmeg
- Sugar or Honey to serve
- Evaporated Milk or your choice of milk to serve
- Boiled hot water/ Hot Milk
1. Wash the rice until the water runs clear.
2. Drain excess water using sieve.
3. Place rice in a pot.
4. Add 5 cups of water.
5. Cook the rice until soft. Use additional water if required to get the rice very soft and mushy.
6. Add a pinch of salt to taste.
7. Using the flat side of a wooden spoon, mash the rice until it’s soft and comes together in a lumps. Add some boiled hot water/hot milk to loosen it up to the thickness and consistency you prefer.
8. Serve the rice water hot with a sprinkle of nutmeg, some evaporated milk, sugar/honey, toasted nuts and coconut flakes or whatever you fancy in your pudding.
